Shulman biraderler tarafından kurulan Art Rock, Progressive Rock grubu Gentle Giant'in öncesi Simon Dupree with the Big Sound'a dayanır. Arada the Moles adıyla yayınladıkları bir single da bulunuyor. Ama orjinal grup Gentle Giant tam olarak 1970 yılında kuruldu. Phil, Ray ve Derek Shulman tarafından kurulan gruba Simon Dupree'den gelen davulcu Martin Smith, 1969 yılında Müzik Akademisi'nden kompozisyon derecesi alan Kerry Minnear ve gitarist Gary Green dahil oldu.İlk albümleri, rock içindeki diğer grupların hiç yapmadığı ve bugüne kadar yapacağı gibi kontrpuan ve polifoni kullanan kapsamlı düzenlemelerini sergiledi. Çok parçalı şarkı söyleme ve klasik enstrümanların kullanımı mevcut sahneye paraleldi, sadece bu yönleri ile rock müziği çok ileriye taşıdılar.
Birbiri ardına çıkan albümlerle büyük bir başarı elde ettiler. Ama grubun beyni sayılan Phil Shulman hem aralarındaki yaş farkı hem de ailesine zaman ayırmak istemesi yüzünden gruptan ayrıldı. Phil'in ayrılması daha yumuşak müzikal anlayışın ve akustik enstrüman kullanımın azalması manasına gelse de GG çizgisini bozmadı.
